After triple bar stops on a Friday night, a hearty breakfast is required the morning after. Here’s onc suggestion.
Sausage, onion and green pepper frittata with toast and a large mug of Vietnamese coffee.
-dice half an Italian sausage or chorizo
-dice half a green pepper
-thinly slice 1/4 of an onion
-3 eggs beaten, toss in salt, pepper and pinch of chili powder
Pan fry in a chef’s pan the sausage, onions, green peppers in a couple tablespoons of butter
Pour in the eggs and cook for about a minute then toss into a 350 degree oven for about 5-8 minutes.
